Information:
  • Produces benzopyrene hydroxylase [benzo(a)pyrene hydroxylase]
  • O3, DMS 63 µg/l, high pyruvic, low acetic, S.G. 6.9, pH 3.91 used in BRF brewery where it has proved a stable yeast. Fermentation stops at 1012 in batch fermentation; no rising gas bubbles to keep it in suspension. Produces very rough variants which can form 20% of the population and do not assimilate maltotriose. Maltotriose is fermented relatively slowly by the normal strain. (See NCYC 753 & 754).
